Gluten Free Crispy Duck and Hoisin Sauce

By some act of miraculous fate this incredible recipe for Gluten Free Crispy Duck and Hoisin Sauce found its way into my life courtesy of the very clever Natural Chef Ceri Jones and her blog Natural Kitchen Adventures.

In my previous life as a slightly more unhealthy version of my current self, my go-to take-away/dirty meal out of choice would always be a Chinese. And what is a Chinese without Crispy Duck and Pancakes? Not a Chinese I tell you! Even when I was a teenage vegetarian, I would make an exception for Crispy Duck (and spaghetti bolognese on the odd occasion – I was a pretty crap vegetarian). And then sometime in my late teens/early 20s I discovered that I was very sensitive to MSG and it gave me palpitations. Disaster! No more Chinese! Until I found a few restaurants that served MSG-free food and was reunited with my favourite dish again.

However, more recently, since the discovery of my gluten intolerance, Chinese food has been completely off limits altogether as it is all absolutely coated and covered in more gluten than a gluten party in Glutenville. All that soy sauce  you see, and of course the pancakes are made of wheat flour. 

So it was with a heavy heart that I waved goodbye once and for all to my beloved Chinese meals, in particular my Crispy Duck and Pancakes, and learnt to love curries instead (they don’t use wheat flour in Indian cooking, so it’s a gluten intolerant’s dream take-away).

All this sadness came to an end last week when this divine recipe for Gluten Free Crispy Duck and Hoisin Sauce popped up in my Facebook feed. No! Surely not! A version of my favourite ever dish that I can make myself and that I can actually eat. All my Christmasses have come at once!

And so I diligently bought every single ingredient, planned a quiet night in with the hubby and made this amazing dish last night. Well, it did not disappoint. The Hoisin Sauce is possibly one of the most delicious sauces we have ever tasted (even the hubby said so), so easy to prepare and made the duck positively sing. And the use of lettuce leaves instead of pancakes was just inspired. 

This dish is now firmly in my repertoire and one I shall be impressing my friends with at dinner parties!
